Ridiculously Easy Baked Sweet Potato Recipe
I’ll be honest. Â I don’t really enjoy cooking even though I do a lot of it so the easier a meal is, the happier I am. That’s why I love this insanely easy recipe for baked sweet potato. Â Here it goes:

- Put sweet potato into pan
- Put pan into 400 degree oven
- Cook for one hour

That’s it. Â Seriously. Â And it’s de-li-cious. Â It tastes a little like mashed up brown sugar. Â Even my pickiest eater at home gobbles it up.
I suppose I could give you a few more instructions if you really need them. Â Wash the sweet potato. Â Cut off any funky looking parts. Â Preheat the oven first. Â To make it extra good, add a little butter from grass-fed cows (we like Kerrygold–available at Market Basket for you locals) and maybe a sprinkle of salt.
Sweet potatoes are easy to love.  Among their nutritious virtues, they contain loads of Vitamin A and fiber which aid with blood sugar regulation and the antioxidant beta-carotene.*  Eat up and enjoy!
